Abstract
Polifenoli so bili v zadnjih desetletjih cilj številnih raziskav zaradi novoodkritih pozitivnih učinkov na zdravje človeka. V diplomski nalogi so podrobneje opisane posamezne skupine polifenolov in proteini krvne plazme. Predstavljeni so absorpcija, transport in izločitev polifenolov ter problematika absorpcije v telo. Polifenoli se po telesu prenašajo predvsem s proteini krvne plazme. Opisane so nekatere metode, s katerimi lahko preučujemo interakcije med polifenoli in proteini ter nastale komplekse. Interakcije med njimi so lahko reverzibilne in ireverzibilne. Ker na same interakcije močno vpliva struktura polifenolov, je narejen podrobnejši pregled kako zamenjava skupin na posameznih obročih nekaterih polifenolov vpliva na afiniteto do proteinov krvne plazme. Na primerih študij je predstavljeno, kako interakcije vplivajo na strukturo polifenolov in proteinov krvne plazme. Podani so primeri vpliva polifenolov na naše zdravje in kaj lahko pričakujemo od polifenolov v prihodnosti.

Secondary abstract: |
Polyphenols have been the goal of many studies over the past decades because of the newly-discovered positive effects on human health. In this thesis, individual groups of polyphenols and blood plasma proteins are described in more detail. Absorption, transport and elimination of polyphenols and the problems of absorption into the body are presented. Polyphenols are transported in the body primarily with blood plasma proteins. Some methods for the study of polyphenol-plasma proteins interactions and the resulting complexes are described. The interactions between them can be reversible or irreversible. Since the interactions are strongly influenced by the structure of polyphenols, a more detailed overview is made of how the replacement of groups on individual rings of some polyphenols affect the affinity for blood plasma proteins. Examples of the effects of polyphenols on our health are given and what can be expected of polyphenols in the future. |
