Abstract

Namen diplomskega dela je bilo s pomočjo literature ugotoviti, kako so bioaktivne snovi v sadju in zelenjavi dostopne za naše telo. Ker je ta skupina snovi zelo obsežna in med seboj raznolika, sem si za boljšo preglednost izbrala šest najbolj poznanih bioaktivnih snovi. V prvem delu sem predstavila posamezne skupine z njihovimi strukturnimi formulami in napisala, v katerem sadju in zelenjavi se pretežno nahajajo. Že tu se pokaže velika raznolikost tudi znotraj posameznih skupin. V sadju najdemo pretežno polifenolne spojine, v zelenjavi pa karotenoide in glukozinolate. V obeh skupinah se nahajajo fitosteroli in vitamin C. V nadaljevanju sem opisala, kakšna je biološka dostopnost posamezne skupine bioaktivnih snovi. Osredotočila sem se predvsem na prebavo in metabolizem posameznih skupin snovi. Ob koncu tega dela sem predstavila tudi alternative za izboljšanje biološka dostopnosti, še posebej tiste, ki so trenutno najbolj aktualne v znanstveni literaturi.

Secondary title: Bioavailability of bioactive compounds in fruits and vegetables
Secondary abstract: The purpose of this thesis is to determine the extent to which bioactive compounds in fruits and vegetables are available to our body on the basis of scientific literature. As this group of compounds is very extensive and diverse, the thesis discusses only the six most well-known groups of compounds. Firstly, individual groups with their chemical structures are presented, as well as their presence in fruits and vegetables. At this point already, great diversity can be observed even within individual groups. Phenolic compounds are predominantly found in fruits, while carotenoids and glucosinolates predominate in vegetables. Phytosterols and vitamin C are present in both groups. Secondly, the bioavailability of each group of bioactive compounds is described with the main focus on digestion and metabolism of individual groups of compounds. Later on, the alternatives for improving bioavailability are discussed, especially those that are currently most relevant in the scientific literature.
