Abstract

Pridelava vina vključuje uporabo velike količine dragocenih virov, kot so voda, gnojila in številni drugi enološki proizvodi oziroma sredstva. Prav tako se proizvede velika količina odpadne vode in biološko razgradljivih odpadkov, ki so ob nepravilnem ravnanju lahko toksični za okolje in kontaminirajo pridelovalne površine. Vse to ima velik negativni vpliv na okolje. V zadnjih letih je varovanje okolja zelo pomembno in zato si vinarji prizadevajo pridelati vino tako, da bi bil vpliv proizvodnje na okolje minimalen. Z manjšo porabo vode, uporabo alternativnih virov energije, ponovno uporabo odpadkov (stranskih proizvodov) in odpadne vode ter uporabo naravnih gnojil, fitofarmacevtskih in enoloških sredstev lahko vpliv na okolje med pridelavo vina občutno zmanjšamo. Čeprav je znanih že kar nekaj rešitev, se to področje še vedno raziskuje in se stremi k še boljšim načinom za zmanjšanje navedenega vpliva. Tudi v Sloveniji pridelamo veliko vina, zato se temu problemu ne moremo izogniti. V diplomski nalogi bomo ugotavljali, na kakšne načine pridelava vina vpliva na okolje in kakšne rešitve so mogoče. V eksperimentalnem delu bomo na podlagi zbranih informacij predstavili, kako se s tem problemom spopadajo vinarji v Sloveniji.

Secondary title: Impact of wine production on the environment
Secondary abstract: Wine production involves the use of a large amount of valuable resources, such as water, fertilizers and many other oenological products or agents. It also produces large amounts of wastewater and organic waste, which, if handled improperly, can be toxic to the environment and contaminate production areas. All this has a major negative impact on the environment. In recent years, environmental protection has been very important and therefore efforts are being made to produce wine in such a way that the impact of production on the environment is minimal. By reducing water consumption, using alternative energy sources, reusing waste (by-products) and wastewater, and using natural fertilizers, plant protection products and oenological agents, we can significantly reduce the impact on the environment during wine production. Although quite a few solutions are already known, this area is still being explored and efforts are being made to find even better ways to reduce this impact. We also produce a lot of wine in Slovenia, so we cannot avoid this problem. In the diploma thesis we will find out in what ways wine production affects the environment and what some possible solutions. In the experimental part, we will present, on the basis of the collected information, how winemakers in Slovenia deal with this problem.
