Abstract

Paradižnik je ena najbolj razširjenih zelenjadnic na svetu. Poleg zunanje (videz) in notranje kakovosti plodov paradižnika je za uživanje in posledični nakup izrednega pomena tudi senzorična kakovost (čvrstost in okus). Analizirana je bila notranja (vsebnost nitratov, nitritov, vitamina C, sladkorja, pH in suhe snovi) in zunanja (obseg, višina, masa, barva in trdota) kakovost plodov štirih kultivarjev (Marmande, Cinto F1, Rugantino F1 in Donatella) ekološko pridelanega paradižnika na kmetiji Sonje Sreš v letu 2019. Obiskovalci sejma AGRA so senzorično ocenili videz (oblika, barva), konsistenco (čvrstost, sočnost), okus (sladkost, kislost) in skupen vtis plodov paradižnika. Kultivar je statistično značilno vplival na analizirane parametre. Ocenjevalcem je bil najbolj všeč kultivar Donatella, ki je med vsemi vseboval največ sladkorja.

Secondary abstract: The tomato is one of the most prevalent vegetables on Earth. In addition to the external appearance and internal quality of the tomato fruit, the sensory quality (firmness and flavour) is also of paramount importance for consumption and subsequent purchase. The internal (nitrate, nitrite, vitamin C, sugar, pH and dry matter content) and external (volume, height, weight, colour and hardness) fruit quality of four cultivars (Marmande, Cinto F1, Rugantino F1 and Donatella) of organic tomatoes produced on Sonja Sreš's farm in 2019 was analysed. Visitors of the AGRA fair have sensorially assessed the appearance (shape, colour), consistency (firmness, succulence), taste (sweetness, acidity), and overall impression of the tomato fruits. The cultivar had a statistically significant effect on the analysed parameters. The judges liked the Donatella cultivar best, which had the highest sugar content of all the varieties.
