Abstract

Z magistrsko nalogo smo proučevali tržni potencial predelave mokarjev (Tenebrio sp.) in 8 različnih izdelkov iz njih (proteinskih praškov in pekovskih zmesi) ter koeficient ekonomičnosti glede na predelavo. Izdelali smo poslovni načrt po modelu Canvas in kalkulacijo skupnih stroškov, v kateri smo s programom Excel ocenili vse pomembne ekonomske parametre. Ocenili smo stroške materiala in pripravili model prodaje izdelkov za prvi dve leti poslovanja. Ugotovili smo, da naši izdelki predstavljajo velik tržni potencial na slovenskem trgu, saj teh izdelkov na njem še ni. Rezultati simulacijskega modela so pokazali, da je predelava mokarjev ekonomsko upravičena. Predelava mokarjev je pri vseh izdelkih ekonomsko upravičena, saj so vsi koeficienti ekonomičnosti > 1. Največji tržni potencial smo ugotovili pri proteinski kaši (Ke = 6,45). S finančnim načrtom smo določili denarni tok, ki nam je pokazal, da je za prvi dve leti poslovanja primerna oblika dejavnosti s. p., v tretjem letu pa prehod na d. o. o. Zaključimo lahko, da Slovenija predstavlja potencialno trg za izdelke iz mokarjev in da lahko idejo zaradi sprostitve zakonodaje realiziramo v zelo kratkem času.

Secondary abstract: With the master's thesis we research the market potential of processing mealworms (Tenebrio sp.) into 8 different products (protein powders and bakery mixtures) and the economic coefficient in terms of processing. We prepared a business plan according to the Canvas model and an economic model in which we calculated all important economic parameters with Excel program. We recalculated material costs and set the product sales model for the first two years of business. We found that our products represent a great market potential on the Slovenian market, as these products are not yet offered on the Slovenian market. The results of the simulation model showed that the processing of mealworms is economically efficient. Processing is economically justified for all products, as all economic coefficients are > 1. The highest market potential was found for protein porridge (Ke = 6.45). With the help of a financial plan, we determined the cash flow, which showed us that the suitable business form for the first two years is s. p., and in the third year the transition to d. o. o. We can conclude that Slovenia represents a potential market for our products and that the idea can be realized in a very short time due to the release of legislation.
