Abstract

V industriji prehrane v zadnjih letih dobava blaga predstavlja velik oziroma največji delež stroškov v podjetju, zato je potrebno primerno organizirati proces naročanja blaga za restavracije in sodelovanje z dobavitelji. Predvsem v trenutnem času pandemije COVID-19, ko je na voljo manj površin za goste lokalov in občasna zapiranja gostinskih lokalov. V diplomski nalogi smo predstavili primer neorganiziranega naročanja posameznih enot podjetja ter organizirano naročanje artiklov preko centralnega skladišča. Slednje se je izkazalo za bolj primerno na podlagi časovnih primerjav procesa skladiščenja in razlike v stroških. Za analizo smo izbrali sedem naključnih artiklov, ki smo jih analizirali na podlagi potrebne mesečne količine in primerjavo cen na trgu, ki ob nepremišljenem naročanju podjetju hitro prinesejo večje stroške.

Secondary abstract: In the food industry, the supply of goods in recent years represent a large if not the largest share of the costs in the company, so it is necessary to properly organize the process of ordering goods for restaurants and cooperation with suppliers. Esspecially in the current time of the COVID-19 pandemic, when there is less space available for restaurant guests, and occasional closures of restaurants. In the diploma thesis we presented a example of unorganized ordering for individual units of companies, which would organize the ordering of items through the central warehouse. The latter proved to be more appropriate based on time comparisons of the storage process and the difference in costs overtime. For the analysis, we selected seven random items, which we analyzed on the basis of the required monthly quantity and a comparison of prices on the market, which, when recklessly ordering, quickly bring higher costs to the company.
