Abstract

V magistrskem delu preučevana soja je bila v letu 2019 pridelana v poskusu, ki ga izvedel Kmetijski inštitut Slovenije. Za namen raziskave smo uporabili 12 sort (Erica, Sculptor, Tiguan, Alexa, Aurelina, RGT Shouna, Abelina, Cordoba, NS Favorit, Boglar, ES Mentor in Lenka) treh različnih zrelostnih skupin (zelo zgodnje – 0000, srednje zgodnje – 000 in zgodnje sorte – 00). Vrednotili smo maso 1000-semen, koeficient vpijanja vode, izplen okare in sojinega »mleka«, volumen sojine »sirotke« ter izplen svilnatega in čvrstega tofuja (1h in 24h obtežitve). Rezultati analize so pokazali, da zrelostna skupina ne vpliva, med tem ko ima sorta značilen vpliv na merjene parametre. Višje izplene imajo sorte z nižjim koeficientom vpijanja vode in z nižjo vsebnostjo surovih beljakovin v semenu. V skupini 000 imata najvišje izplene svilnatega in čvrstega tofuja sorti Cordoba (1,83 kg/kg in 1,38 kg/kg semena) ter NS Favorit (1,59 kg/kg in 1,33 kg/kg semena). V skupini 00 je po izplenu na prvem mestu sorta Boglar (1,79 kg/kg in 1,45 kg/kg semena). Ker je sorta Boglar dosegla tudi visoke pridelke semena v poskusih (4.713 kg/ha), bi po projekciji s to sorto na enoto površine pridelali 8.454,1 kg mehkega in 6.853,4 kg čvrstega tofuja na hektar

Secondary title: Tofu yields from different soybean varieties
Secondary abstract: The soybean studied in this thesis was grown in 2019 in an experiment conducted by the Agricultural Institute of Slovenia. For the purpose of the research, 12 varieties (Erica, Sculptor, Tiguan, Alexa, Aurelina, RGT Shouna, Abelina, Cordoba, NS Favorit, Boglar, ES Mentor in Lenka) of three different maturity groups (very early - 0000, medium early - 000 and early varieties – 00) were used. The weight of 1000 seeds, water absorption coefficient, yield of okara and soy milk, volume of soybean whey and yield of silky and firm tofu (1h and 24h pressing) were evaluated. The results of the analysis showed, that the maturity group has no influence, while the variety has a significant influence on the measured parameters. Varieties with a lower water absorption coefficient and a lower crude protein content in the seed have higher yields. In group 000, the variety Cordoba (1.83 kg/kg and 1.38 kg/kg seed) and NS Favorit (1.59 kg/kg and 1.33 kg/kg seed) had the highest yields of silky and firm tofu. In group 00, the Boglar variety was the most productive according to yield (1.79 kg/kg and 1.45 kg/kg of seeds). Theoretical yields of silky and firm tofu of the variety Bolgar (4713 kg/ha grain) are 8,454.1 kg and 6,853.4 kg per hectare, respectively
