Abstract

Oskrbovalne mreže hotelov so kompleksen proces, za katerega je ključno, da je narejena podrobna analiza. V zaključnem delu je analizirana oskrbovalna veriga hotelov in poudarjeni ključni dejavniki, ki pri tem sodelujejo. V naši raziskavi je sodelovalo 19 hotelov, ki so razdeljeni glede na število zvezdic. S pomočjo raziskave so pridobljeni rezultati, s katerimi je bilo pridobljeno boljše razumevanje odnosov dobaviteljev in hotelov. V teoretičnem delu so opisani vsi dejavniki oskrbovalne mreže in opisano delovanje hotelov. V raziskovalnem delu je vključena anketa, ki nam je pomagala potrditi oziroma zavrniti hipotezi. Zaključek diplomskega dela je, da obiskanost hotelov, v večini primerov, ne vpliva na boljša pogajalska izhodišča z dobavitelji. Glede na rezultate je ugotovljeno, da je sodelovanje z manjšimi dobavitelji bolj dolgoročno.

Secondary title: Supply chain analysis of hotels
Secondary abstract: Hotel supply chains are a complex process for which it is essential that a detailed analysis is created. In the assignment, we analyse the supply chain of hotels and highlight the key factors involved. The 19 hotels in our survey has provided us with results that have given us a better understanding of the relationship between suppliers and hotels. In the theoretical part, we describe all the factors of supply chains and presented the functioning of hotels. In the research part, we included a survey which helped us to confirm or reject the hypotheses. We have concluded that, in most cases, hotel visits does not influence the better negotiating positions with suppliers. Based on the results, we have found that working with smaller suppliers is more long term.
