Abstract

Kmetija Matic je kmetija z dolgoletno tradicijo izdelave jabolčnega soka. Tako kot pri vsakem proizvodnem procesu je tudi tukaj potrebno določiti dejavnike, ki vplivajo na kakovost končnega izdelka. Bistvo diplomskega dela je bila definicija glavnih dejavnikov kakovosti. Le-te smo tudi podrobneje analizirali. Določili smo njihov vpliv na končni izdelek. Posamezne dejavnike smo tudi ovrednotili, kateri so bolj in kateri manj kritični za končni izdelek. V teoretičnem delu smo predstavili osnovne pojme kakovosti, s poudarkom na managementu kakovosti in vse, kar se tiče kakovosti izdelkov in storitev (od zagotavljanja kakovosti izdelkov, postopkov preverjanja kakovosti, izboljševanja kakovosti ter zadovoljstva uporabnikov oziroma kupcev). V raziskovalnem delu, ki smo se ga lotili s pomočjo ankete, smo preverjali, kako dobro nadzorujemo posamezne dejavnike ter kako to vpliva na končni izdelek. Za raziskavo smo uporabili metodo anonimnega anketiranja, s katero smo prišli do ugotovitve, da so kupci z jabolčnim sokom Kmetije Matic ter tudi ostalimi izdelki iz njihove ponudbe zelo zadovoljni. Edina pomanjkljivost, ki smo jo dobili kot rezultat ankete, je poškodovana embalaža ‒ netočno nameščena etiketa na steklenico. To je bilo zaradi napake na stroju, kar pa lahko popravimo tako, da zagotovimo večji nadzor zaposlenega, ki upravlja etiketirni stroj. V raziskavi smo ugotovili, da se okus jabolčnega soka spreminja. Okus se spreminja zaradi močnega vpliva dejavnikov, ki jih je težko predvideti. To so večinoma vremenske razmere, kot so toča, suša. Prav tako so nepredvidljivi tudi škodljivci. Tako se lahko zgodi situacija, da določene sorte, ki prispeva svoj unikaten okus, enostavno ni, ker nesreča lahko prizadene celotno regijo, kjer določena sorta uspeva.

Secondary title: ANALYSIS OF QUALITY FACTORS OF APPLE JUICE PRODUCTION – A CASE STUDY OF FARM MATIC
Secondary abstract: The Matic Farm is a farm with a long tradition of producing apple juice. As in any manufacturing process it is necessary to identify the factors that affect the quality of the final product. The essence of the thesis was to define the main quality factors. We analyzed them in detail. We determined their impact on the final product. Individual factors were also evaluated in divided in those more and those less critical to the final product. In the theoretical part the basic concepts of quality were presented with a focus on quality management and all in terms of product and service quality (of product quality assurance, quality procedures, quality improvement and satisfaction of users or customers). In the research work, which was undertaken with a survey, we examined how well-controlled individual factors are and how this affects the final product. For this study we used an anonymous survey method, by which we came to the conclusion that purchasers of Matic apple juice, as well as other products from their offer, are very satisfied. The only drawback, that we get as a result of the survey, is occasionally damaged package, for example incorrectly placed label on the bottle. This was due to an error on the machine, which can be corrected by ensuring greater control by the employee, who manages the labeling machine. In this study we found that the taste of apple juice varies. The taste is changing because of the strong influence of factors which are difficult to predict. They are mostly natural conditions such as hail, drought, pests. Thus, it may be possible, that a certain sort, which contributes its distinct flavour, isn't available simply because the whole region, where it thrives, is affected by adverse weather conditions.
