Abstract

Na vseh področjih delovanja se vse bolj izraža potreba po zmanjšanju negativnih vplivov na okolje. Emisije toplogrednih plinov kot posledica netrajnostne rabe virov naj bi bile tesno povezane s podnebnimi spremembami, ki so eden od ključnih izzivov 21. stoletja. V zadnjem času številne raziskave navajajo pomembne povezave med poslovanjem podjetij, emisijami toplogrednih plinov v celotnem življenjskem ciklu izdelka in podnebnimi spremembami. Eno izmed orodij za merjenje okoljskega vpliva izdelka v njegovem celotnem življenjskem ciklu je izračun ogljičnega odtisa izdelka. Ta ovrednoti emisije toplogrednih plinov v celotnem življenjskem ciklu izdelka ter nam pomaga razumeti, v kolikšni meri posamezne dejavnosti v življenjskem ciklu izdelka prispevajo k ogljičnemu odtisu, in poiskati možnosti za zmanjšanje emisij toplogrednih plinov. Teoretični del magistrskega dela vsebuje predstavitev podnebnih sprememb, trajnostne rabe virov, družbene odgovornosti podjetij, ogljičnega odtisa in trajnostnih oskrbnih verig. Predstavljene so novejše ugotovitve iz znanstvenih in strokovnih virov, ki poleg teoretičnega razumevanja ogljičnega odtisa izdelka zagotavljajo smernice in izhodišča za zmanjšanje negativnih vplivov na okolje, znižanje stroškov poslovanja in izboljšanje konkurenčnosti podjetij. V magistrskem delu je predstavljen izračun ogljičnega odtisa pekarskega izdelka trgovske znamke Mercator v skladu z zahtevami modela Publicly Available Specification PAS 2050:2011. Izračun zajema celoten življenjski cikel izdelka od zajema surovin do njegove predelave ter vključuje procese, pri katerih prihaja do emisij toplogrednih plinov, ki so razdeljeni v pet faz. Na podlagi pridobljenih rezultatov so bile v celotni oskrbni verigi in pri deležniku v oskrbni verigi, trgovskem podjetju Mercator, d.d., opredeljene dejavnosti, pri katerih nastaja največ emisij toplogrednih plinov ter obstaja največ možnosti za izboljšave in zmanjšanje emisij toplogrednih plinov. Ugotovitve, ki izhajajo iz rezultatov izračuna ogljičnega odtisa pekarskega izdelka trgovske znamke Mercator, so bile osnova za predloge tehnoloških, organizacijskih in kadrovskih sprememb, s katerimi se lahko zmanjša obremenjevanje okolja, znižajo stroški poslovanja in poveča konkurenčnost trgovskega podjetja Mercator, d.d. Z upoštevanjem ugotovitev, ki izhajajo iz rezultatov izračuna ogljičnega odtisa pekarskega izdelka trgovske znamke Mercator, se lahko zagotovi tudi preprostejša in učinkovitejša uporaba tega orodja za izračun ogljičnega odtisa izdelka v trgovskih podjetjih.

Secondary abstract: There is an ever-increasing need for reducing adverse environmental impacts in all action areas. Greenhouse gas emissions caused by the unsustainable use of resources are supposedly heavily linked with climate change, which is one of the key challenges of the 21st century. In recent years, many research activities have shown how important the connection between business, greenhouse gas emissions during the product life cycle and climate change is. Carbon footprint calculation is one of the tools for measuring the environmental impact of the product throughout its life cycle. It assesses the greenhouse gas emissions throughout the product life cycle, contributes to understanding to what extent an individual activity in the product life cycle contributes to the carbon footprint and offers solutions for reducing the greenhouse gas emissions. The theoretical part of the master's thesis contains a presentation of climate change, sustainable use of resources, corporate social responsibility, carbon footprint and sustainable supply chains. It presents the newest findings from scientific and academic sources, which theoretically explain the carbon footprint and provide guidelines and the basis for reducing adverse environmental impacts, lowering operating costs and increasing the competitiveness of undertakings. The master's thesis includes a presentation of the carbon footprint calculation for the Mercator brand bakery product in line with the requirements of the Publicly Available Specification PAS 2050:2011 model. The calculation covers the entire product life cycle from the extraction of raw materials to product processing, which includes processes, divided into five stages that cause greenhouse gas emissions. On the basis of the acquired results, activities throughout the supply chain and those of the supply chain stakeholder, i.e. Mercator, d.d., have been identified which contribute the most to the greenhouse gas emissions and have the greatest potential for their improvement and the reduction of greenhouse gas emissions. Conclusions from the results of the carbon footprint calculation for the Mercator brand bakery product served as a basis for the suggestions in relation with the technological and organisational changes and changes in the area of human resources, which could reduce the environmental burden, lower the operational costs and increase the competitiveness of the Mercator, d.d. retail company. The conclusions based on the results of the carbon footprint calculation for the Mercator brand bakery product could lead to a streamlined, more efficient use of this tool for the carbon footprint calculation in retail companies.
