Abstract

Zagotavljanje hladnih verig v podjetju Izvajanje hladnih verig zahteva dobro logistično organizacijo in usposobljen kader in zahteva povezavo med seboj, da živila tečejo v kontinuirani verigi od pošiljatelja do prejemnika, saj je bistvenega pomena, da se veriga ne prekine. Hladna veriga mesa in mesnih izdelkov je zelo ozko področje, ki pomeni vzdrževanje predpisane dovolj nizke temperature živil, da ohranimo varnost in čim boljšo kakovost živil v celotni živilski verigi; od proizvodnje, transporta, skladiščenja do končnega kupca; doslednost je potrebna od začetka do konca. Do prekinitve hladnih verig pride najpogosteje pri njegovi manipulaciji in transportu. Zato mora celotna oskrbovalna veriga načrtovana do najmanjše podrobnosti, saj v nasprotnem primeru lahko pride do prekinitve hladnih verig in s tem privede do pokvarite blaga. Nadzor nad hladno verigo mora biti potrebno nadziran in dokumentiran, saj le tako dokazujemo zagotavljanje neprekinjene hladne verige.

Secondary abstract: The provision of cold chains demands good logistic organization, well-trained staff and an established infrastructure, which ensures that the food is flowing continuously from the sender to the receiver. This is crucial, since otherwise the chain breaks. The cold chain of meat and meat products is a very narrow field, implying maintenance of the required low enough temperature of food in order to preserve the safety and highest possible quality of food in the entire food chain: from the production, transport, storage to the final customer. Consistency is needed from the beginning until the end. The cold chain is mostly being broken during its manipulation or transport. Therefore, the supply chain needs to be planned through the smallest detail, since otherwise the cold chain breaks and consequently the goods are being spoiled. Controll over the cold chain needs to be monitored and documented, since this is the only way, we can prove that the cold chain has not been broken.
