Abstract

V okviru magistrskega dela smo pridobili podatke o vsebnosti antioksidantov določenih z metodo Folin Ciocalteu v 24 različnih vrstah svežega sadja in 20 vrstah zelenjave. Za vsako vrsto smo pridobili podatke iz najmanj desetih različnih znanstvenih publikacij. Pridobljene podatke smo statistično obdelali in izračunali povprečno vrednost ter mediano za vsebnost antioksidantov. Analiza rezultatov je razkrila velika odstopanja med različnimi literaturnimi viri za enake vrste. Mediana kvocientov med največjo in najmanjšo vsebnostjo antioksidantov pri posameznih vrstah sadja je 22, pri zelenjavi pa 18. Pridobili smo tudi podatke o povprečnih maloprodajnih cenah 23 vrst sadja in 17 vrst zelenjave v letih 2014 in 2015 za ZDA. Ugotovili smo, da obstajajo razlike v cenovni dostopnosti vrst sadja in zelenjave, ki se dojemajo kot zdravju koristnejša, kot tudi razlike v ceni, glede na velikost pakiranja ter način pridelave (ekološko, konvencionalno). Normalizacija vsebnosti antioksidantov na ceno razkrije, da so sadje kot slive, banane in jabolka ter zelenjava kot krompir, čebula in zelje cenovno najbolj dostopen vir antioksidantov.

Secondary title: Comparison of the antioxidant content of vegetables and fruits in relation to their retail prices
Secondary abstract: In this master's thesis we obtained and elaborated data on the content of anti-oxidants determined by the Folin Ciocalteu assay for 24 different types of fresh fruit and 20 types of vegetables. For each species we obtained data from at least ten different scientific publications. Obtained data were statistically analyzed and average and median value of the antioxidant content were determined. The analysis of the results revealed great differences between publications for the same types of fruits or vegetables. The median of the quotients between the highest and the lowest antioxidant content for the particular species is 22 for fruits and 18 for vegetables. We also obtained data on average retail prices for 23 types of fruit and 17 types of vegetables in years 2014 and 2015, for the USA. We have found that there are differences in the price accessibility of fruit and vegetables that are perceived as healthier, but also price differences, depending on the size of the packaging and the type of agricultural practice (organic, conventional). Normalizing the content of antioxidants to the price reveals that the fruit, such as plums, bananas and apples and vegetables like potatoes, onion and cabbage are the most affordable source of antioxidants.
