Abstract
Prekmurska gibanica je zaradi svoje sestave, videza in okusa drugačna od ostalih sladic, zato smo se odločili diplomsko delo posvetiti tej sladici. Predstavili smo njeno vključenost v kulinarični turizem v Prekmurju. V teoretičnem delu smo podrobneje opisali kulinarični turizem, kulinarične prireditve in prekmursko gibanico, blagovno znamko in promocijo. Naši cilji so bili analizirati kulinarični turizem v Prekmurju, raziskati načine ponudbe in promocije prekmurske gibanice s certifikatom na turističnih kmetijah, ugotoviti, na katerih turističnih prireditvah se najpogosteje pojavlja in na kakšen način se ponuja in promovira ter pripraviti priporočila za boljšo promocijo prekmurske gibanice na kulinaričnih prireditvah v Prekmurju. V empiričnem delu smo skozi kvalitativno raziskavo študijo primera uporabili metodo kodiranja, kjer smo analizirali enajst intervjujev – deset intervjujev je bilo opravljenih s predstavniki turističnih kmetij, ki imajo certifikat za prekmursko gibanico, enajsti pa z Društvom za promocijo in zaščito prekmurskih dobrot, ki je organizator Festivala prekmurske šunke in prekmurske gibanice, ki smo ga obiskali in opazovali z udeležbo. Ugotovili smo, da je prekmurska gibanica zelo dobro vključena v kulinarični turizem v Prekmurju, da je že zdaj zelo dobro promovirana, in da se vsi ponudniki, tj. turistične kmetije, zavedajo prednosti sodelovanj ter povezovanj.

The inclusion of prekmurian layer cake in the culinary tourism in Prekmurje |

Prekmurska gibanica differs from other desserts in its composition, appearance, and taste, which is why we chose to focus our diploma thesis on it. We discussed her role in culinary tourism in Prekmurje. In the theoretical section, we addressed culinary tourism, culinary events, Prekmurska gibanica, branding, and promotion in greater detail. Our objectives were to analyse culinary tourism in Prekmurje, investigate ways of offering and promoting Prekmurje gibanica with a certificate on tourist farms, determine at which tourist events it appears most frequently and how it is offered and promoted, and prepare recommendations for better promotion of Prekmurje gibanica at culinary events in Prekmurje. In the empirical part, we used the coding method in a qualitative research case study, where we analysed ten interviews: tenth with representatives of tourist farms that have a certificate for Prekmurska gibanica, and the eleventh with the association for the protection and promotion of Prekmurje delicacies, who is the organiser of the Prekmurska gibanica and ham festival, which we visited and observed through participation. We discovered that the Prekmurje gibanica is very well integrated into culinary tourism in Prekmurje, that it is already very effectively promoted, and that all providers, i.e., tourist farms, are well aware of the benefits of cooperation and connections. |
