Abstract

Zaključno delo obravnava načrtovanje in izdelavo komore za suho zorenje mesa, s poudarkom na elektroniki hladilnice in krmiljenju kontrolirane atmosfere za goveje meso. V delu so podrobno opisani ključni pogoji za optimalno zorenje, kot so natančna kontrola temperature, vlažnosti in kroženja zraka. Za vzdrževanje teh pogojev je izbran mikrokrmilnik STM32F746, ki nadzoruje celoten sistem. Poleg tega je za merjenje in regulacijo vlage ter temperature uporabljen senzor SHT31, ki zagotavlja natančne podatke o pogojih v hladilnici. Sistem vključuje tudi končno stikalo, ki spremlja stanje vrat. V delu so predstavljeni izbor komponent, načrtovanje in izdelava elektronskega vezja ter razvoj programske opreme, ki omogoča avtomatizirano upravljanje sistema. Projekt združuje strojne in programske komponente, ki zagotavljajo učinkovito in zanesljivo rešitev za suho zorenje mesa, kar prispeva k izboljšanju teksture in okusa končnega izdelka. Eden pomembnejših dejavnikov pri ohranjanju nekontaminirane atmosfere je tudi razkuževanje prostora z germicidno UVC svetilko, ki razkužuje prostor po vsakem odprtju vrat za časovni okvir 10 minut.

Secondary abstract: The thesis addresses the design and construction of a dry aging chamber for meat, known as a dry ager, with a focus on the electronics of the refrigeration unit and the control of the controlled atmosphere for beef. The work details the key conditions for optimal aging, such as precise control of temperature, humidity, and air circulation. To maintain these conditions, the STM32F746 microcontroller is selected to oversee the entire system. Additionally, the SHT31 sensor is used for measuring and regulating humidity and temperature, providing accurate data on the conditions within the chamber. The system also includes a limit switch to monitor the door status. The thesis presents the selection of components, the design and construction of the electronic circuit, and the development of software that enables automated system management. The project combines hardware and software components to provide an efficient and reliable solution for dry aging meat, contributing to the improvement of the texture and flavor of the final product. One of the important factors in maintaining a “clean” atmosphere is the disinfection of the space with a germicidal UVC lamp, which disinfects the space for a duration of 10 minutes after each door opening.
