Abstract

V Budanjah smo v lastnem vinogradu leta 2021 izvedli poskus z dvema obravnavanjema, in sicer kontrola (K) ter dvojno namensko zorenje grozdja (DMR). Želeli smo ugotoviti, kakšen vpliv ima DMR na kakovost grozdja in vina avtohtone vipavske sorte 'Pinela' (Vitis vinifera L.). S poskusom smo začeli 26. 8. 2021, ko smo opravili prvo vzorčenje grozdnih jagod za merjenje parametrov zorenja. V želeni tehnološki zrelosti grozdja smo 8. 9. 2021 izvedli DMR tako, da smo rodne rozge prerezali in pustili grozde z jagodami veneti na trti. Poskus z DMR smo izvedli na približno 200 trtah. Glede na izmerjene parametre smo 7. 9. 2021 izvedli trgatev K in nato 15. 9. 2021 še trgatev DMR. Grozdju smo izmerili maso 100 jagod, vsebnost skupnih sladkorjev, vsebnost skupnih kislin in pH. Masa 100 jagod je bila večja pri K (233 g) kot pri DMR (225 g).Vsebnost skupnih sladkorjev pri DMR (23,5 °Brix) je bila za 3,3 °Brix večja kot pri K (20,2 °Brix). Nekoliko večje so bile tudi vsebnosti skupnih kislin pri DMR (11,7 g/l) od K (10,3 g/l) in višji pH pri DMR (3,35) od K (3,17). Vinu smo izmerili alkohol, ostanek reducirajočih sladkorjev, vsebnost skupnih kislin in pH. Vino, pridelano iz grozdja DMR, je imelo večjo vsebnost alkohola (13,9 vol. %) kot vino K (10,1 vol. %). Ostanek reducirajočih sladkorjev je bil v vinu DMR (1,1 g/l) nižji, kot pri K (3,4 g/l). Nekoliko večje so bile tudi vsebnosti skupnih kislin pri DMR (8,2 g/l) od K (6,7 g/l) in višji pH pri DMR (3,45) od K (3,27). Glede na pridobljene rezultate sklepamo, da ukrep DMR pozitivno vpliva na kakovost grozdja in vina pinela, vendar bi za natančnejše rezultate morali poskus izvesti večkrat in v večjem obsegu.

Secondary title: Impact of double reasoned maturing on grape and wine quality of grapevine (Vitis vinifera L.) 'Pinela' variety
Secondary abstract: In Budanje, we conducted a trial in our own vineyard in 2021 with two treatments: control (C) and double maturation reasonable (DMR). We aimed to determine the impact of DMR on the quality of the grapes and wine of the indigenous Vipava variety ‘Pinela’ (Vitis vinifera L.). We started the experiment on August 26th 2021, when we carried out the first sampling of grape berries to measure the ripening parameters. On the expected technological maturity of the grapes, on September 8th 2021, we performed DMR by cutting the fruiting canes and leaving the clusters with berries to wither on the vine. The DMR experiment was conducted on approximately 200 vines. Based on the measured parameters, we decided to harvest the control on 7th September and the DMR on 15th September 2021. We weighted the mass of 100 berries and measured the total sugar content, pH, and total acid content of the grapes. The mass of 100 berries was greater in C (233 g) than in DMR (225 g). The total sugar content in DMR grape (23,5 °Brix) was 3,3 °Brix higher than in C grape (20,2 °Brix). The total acid content in DMR (11,7 g/l) was slightly higher compared to C (10,3 g/l) and the pH was higher in DMR (3.35) than in C (3,17). We measured the alcohol content, residual reducing sugars, total acid content and pH in the vine. Wine produced from DMR grapes had a higher alcohol content (13,9 vol. %) than the wine from C (10,1 vol. %) The residual reducing sugars were lower in DMR wine (1,1 g/l) compared to C (3,4 g/l). The total acid content was also higher in DMR (8,2 g/l) than in C (6,7 g/l) and the pH was higher in DMR (3,45) compared to C (3,27). Based on the obtained results, we could say that the DMR treatment positively affects the quality of grapes and wine pinela, but for more precise results, the experiment should be conducted multiple times on a larger scale.
