Povzetek

Pivovarstvo je močna gospodarska panoga, saj je v porastu zanimanje za izdelavo piva. V Sloveniji se je število mikropivovarjev povečalo in z njim priložnosti za razvoj pivskega turizma, ki obsega kulinarična doživetja, kot so obisk pivovarn, okušanje lokalne pijače (piva) in hrane ter množico drugih aktivnosti, povezanih s pivom. V teoretičnem delu smo predstavili kulinarični turizem in njegovo podzvrst pivski turizem. Preučili smo stanje pivovarstva in pivskega turizma v Evropski uniji ter Sloveniji. Podrobneje smo analizirali stanje pivskega turizma pred, med in po pandemiji COVID-19, ki je pustil velike posledice v obratovanju mikropivovarn in posledično pivskem turizmu. Navedli smo primere dobre prakse razvoja pivskega turizma v Ljubljani po pandemiji COVID-19, Natoč mi še enga in Union Experience. V empiričnem delu naloge smo raziskovali izzive in priložnosti za razvoj pivskega turizma v Ljubljani po pandemiji COVID-19. Ugotovili smo, da ima Slovenija/Ljubljana velik potencial za razvijanje pivskega turizma, saj ima bogato kulturno dediščino, ki je priložnost za razvoj pivskih tur in za trženje pivskega turizma. Po pandemiji COVID-19 je v Sloveniji želja deležnikov pivskega turizma zagnati projekt Beer Pass in organizirati festival na temo piva, katerega rdeča nit bi bilo pivo. Na podlagi pregleda literature in opravljenih intervjujev smo podali predloge mikropivovarjem in STO za trajnostni razvoj pivskega turizma v Ljubljani, v smeri obogatitve pivskih tur z doživljanjem pivske zgodbe in povečanega informiranja, promocije mikropivovarjev in njihovih pivsko-turističnih produktov.

Sekundarni povzetek: As interest in beer production is on the rise, brewing has become a strong economic sector. In Slovenia, the number of microbreweries has increased, and with it, the opportunities for the development of beer tourism. The latter includes culinary experiences such as visiting breweries, tasting local drinks (beer) and food, and a host of other beer-related activities. In the theoretical part of this paper, we have presented culinary tourism and its sub-sector, beer tourism. We examined the state of brewing and beer tourism in the European Union and Slovenia. We have analysed in detail beer tourism before, during, and after the COVID-19 pandemic, which had a significant impact on the operation of microbreweries and, consequently, on beer tourism. We gave examples of good practices in the development of beer tourism in Ljubljana after the COVID-19 pandemic, "Natoč mi še enga," and the "Union Experience.” In the empirical part of the thesis, we investigated the challenges and opportunities for the development of beer tourism in Ljubljana after the COVID-19 pandemic. We found that Slovenia/Ljubljana has great potential for the development of beer tourism. Its rich cultural heritage represents an opportunity for the development of beer tours and the marketing of beer tourism. After the COVID-19 pandemic, the desire of beer tourism stakeholders in Slovenia is to launch the Beer Pass project and to organise a beer-themed festival with beer as the central theme. Based on the literature review and interviews, we have made suggestions to microbreweries and The Slovenian Tourist Board (STB) for the sustainable development of beer tourism in Ljubljana. Our proposals include enriching beer tours with the story element and increased informing and promotion of microbreweries and their beer-tourism products.
