Povzetek

Diplomsko delo temelji na primerjavi osmih različnih sort jagod glede njihove kemijske analize in senzorične vrednosti. V raziskavi smo uporabili naslednje sorte jagod: 'Clery', 'Dely', 'Joly', 'Sandra', 'Arianna', 'Limalexia', 'Federica' in 'Malga'. Vse sorte jagod so bile obrane na isti dan. Na FKBV UM so bile izmerjene masa plodov, čvrstost, vsebnost suhe snovi in skupnih titracijskih kislin. Nadaljnje senzorično vrednotenje plodov po hedonski lestvici je vključevalo oceno všečnosti barve, oblike, velikosti, vonja, okusa, arome, čvrstosti in skupno oceno plodov. Pokuševalce smo v poskusu razdelili tudi glede na spol in starost. Rezultati analize plodov so pokazali, da je imela največjo maso in čvrstost plodov sorta 'Federica', medtem ko je sorta 'Malga' imela največjo vsebnost suhe snovi in najnižjo kislost. Pri senzoričnem vrednotenju plodov sta za izgled (barva, velikost) najvišje ocene prijeli sorti 'Malga' in 'Federica'. Pri vrednotenju notranjih parametrov (okus, vonj, aroma) pa so bile najbolje ocenjene sorte 'Clery', 'Dely' in prav tako 'Malga'. Najvišjo skupno oceno je prejela sorta 'Malga'. Spol in starost pokuševalcev nista imela vpliva na všečnost izbranih parametrov.

Sekundarni povzetek: The thesis is based on the comparison of eight different varieties of strawberries according to their chemical analyses and sensory values. The following strawberry varieties were used in the research: 'Clery', 'Dely', 'Joly', 'Sandra', 'Arianna', 'Limalexia', 'Federica' and 'Malga'. All strawberry varieties were picked on the same day. Fruit masses, firmness, dry matter content and total titratable acids were measured at the Faculty of Agriculture and Life Sciences UM. Further sensory evaluation of the fruits, according to the hedonic scale, included an evaluation of the likeability of color, shape, size, smell, taste, aroma, firmness and overall evaluation of the fruits. In the experiment, the tasters were also divided according to gender and age. The results of the fruit analysis showed that the variety 'Federica' had the highest fruit weight and firmness, while the variety 'Malga' had the highest dry matter content and the lowest acidity. In the sensory evaluation of the fruits, the varieties 'Malga' and 'Federica' were rated the highest for their appearance (color, size). In the internal parameter evaluation (taste, smell, aroma), the best evaluated varieties were 'Clery', 'Dely' and also 'Malga'. The variety 'Malga' received the highest overall rating. The gender and age of the tasters had no influence on the likeability of the selected parameters.
