Abstract

Magistrsko delo obravnava problematiko trajnostnega poslovanja hotelov. Tako v hotelski dejavnosti, kot tudi v turističnem sektorju postajajo načela trajnostnega razvoja vse pomembnejša. Ob vplivih na okolje velja poudariti tudi ekonomski in socialni vidik. V raziskavo smo vključili izbrani hotel iz hotelske verige xy. Namen je bilo raziskati, katere možnosti so nam na dosegu za bolj trajnostno poslovanje hotela. Pri tem smo vključili različne vplive na okolje, od odpadkov, porabe električne in toplotne energije do porabe vode. Posebej smo se osredotočili na problematiko odpadne hrane, kjer je poleg okoljskega in ekonomskega izpostavljen tudi etični vidik.

Secondary abstract: Thesis is concerned with the sustainable operation of hotels. In hotel business and in the tourism sector generally the principles of sustainable development become increasingly more important. Besides environmental impacts there should be emphasized also economic and social aspects. The object of this study was a hotel from the hotel chain XY. The purpose of the study was to find the possibilities for more sustainable operation of the hotel. There were various environmental impacts included in the research as are waste, use of heat and electric energy and use of water. The special impact in the research was devoted to the problem of discarded food where besides environmental and economic also the ethical aspect was highlighted.
