Abstract

Odpadna hrana in izgube hrane nastajajo v vseh členih verige preskrbe s hrano od primarne pridelave do potrošnika. To predstavlja stroškovni in družbeni problem ter vpliva na okolje. Vzroki, zaradi katerih odpadna hrana nastaja, so različni in so opisani v diplomskem delu skupaj z drugimi področji, kot so pristopi preučevanja vzrokov nastajanja, sestava odpadne hrane, ukrepi za zmanjšanje in načini ravnanja z izgubami hrane in odpadno hrano. Osredotočili smo se predvsem na člene pred končnim potrošnikom. Izvedli smo intervjuje z deležniki iz različnih sektorjev, ki smo jih vprašali o vzrokih, izzivih, stroških in podpornem okolju, vezanem na odpadno hrano ter o doniranju hrane. S pomočjo odgovorov smo predstavili glavne vzroke za nastajanje odpadne hrane ter druge ugotovitve, povezane s to tematiko, specifično za vsak člen. Podajamo tudi ustrezne ukrepe, ki bi pripomogli k zmanjšanju oziroma preprečevanju nastajanja odpadne hrane.

Secondary abstract: Food waste and losses occur at every stage of the food supply chain, from primary production to the consumer. This presents both economic and social challenges and has environmental impacts. The causes of food waste are diverse and are detailed in the thesis, along with other areas, such as approaches to studying the causes, the composition of food waste, measures for reduction, and methods for managing food losses and waste. Our focus has primarily been on the stages before reaching the final consumer. We conducted interviews with stakeholders from various sectors, questioning them about the causes, challenges, costs, and the supportive environment related to food waste, as well as food donation. Based on the responses, we presented the main causes of food waste generation and other findings related to this issue specific to each stage. Additionally, we propose relevant measures that could contribute to reducing or preventing food waste.
