Abstract

Namen diplomskega dela je bil preučiti biogene amine, njihovo vlogo, živila bogata z biogenimi amini in njihovo povezavo z možgani. Biogeni amini (BA) nastajajo med normalno presnovo mikroorganizmov, rastlin in živali ter imajo več esencialnih vlog. Kljub esencialnosti, lahko pretirano uživanje povzroči toksične ali celo kancerogene učinke. V diplomskem delu so opisani vzroki nastanka BA v hrani in kako lahko reguliramo njihovo koncentracijo v živilih. Največ BA najdemo v ribah, morski hrani, zorjenih sirih, fermentiranih mesnih izdelkih in alkoholnih pijačah. Zakonsko določena najvišja dovoljena koncentracija histamina je določena le za ribe in ribje izdelke. Predstavljena je tudi detoksifikacija BA pri zdravih posameznikih in kaj se zgodi ob prekomernem uživanju, s poudarkom na histaminu, serotoninu ter možganih. Disfunkcija serotonina je dokazana za posameznike, ki trpijo za depresijo. Le ta se lahko do neke mere lajša z uživanjem hrane, bogate z ogljikovimi hidrati in proteinom alfa-laktalbumin. Uživanje tovrstne hrane nima učinka na raven serotonina v možganih zdravih posameznikov. Histamin lahko inducira glavobol v primeru histaminske intolerance in migreno pri že diagnosticiranih posameznikih.

Secondary title: Effect of biogenic amines from food on human brain
Secondary abstract: The aim of this thesis was to study the role of biogenic amines, food enriched with biogenic amines and their effect on human brain. Biogenic amines are produced during metabolism of microorganisms, plants and animals. They have multiple essencial roles, but can cause poisoning and cancer. In this thesis we describe the origin of biogenic amines in food and ways of controling their concentration. Food with highest concentration of biogenic amines are fish, fish products, aged cheese, fermented meats and alcoholic beverages. We explored the detoxification of biogenic amines in healthy individuals and the effect of excessive consumption with emphasis on histamine, serotonin and human brain. Serotonin dysfunction is proven in individuals, suffering from depression. Depression can be relieved with the consumption of carbohydrates and protein alpha-lactalbumin. These sorts of food do not effect brain serotonin levels in healty individuals. Histamine can induce headache (histamine intolerance) and migraine in diagnosed individuals.
